Curry chicken fried brown rice:
- Chicken breast cut into small pieces (season with kosher salt)
- Half a yellow onion 
- Handful sugar snap peas with the ends cut off
- Handful of green onion
- 2 cups of cold and cooked Jasmine brown rice
-  1.5 tsp hot curry powder from Central Market
- 1.5 tsp coconut curry powder from Central Market
- 1 tbsp Sesame oil
- 2 tbsp coconut oil
- 1/2 tsp Gia Vi Bon Hue (I bought this spice from H Mart)
- 1 egg white

1. Get your wok extremely hot.
2. After it is smoking hot, add oil and 30 seconds later, add chicken. Cook chicken until almost fully cooked.
3. Add onion and cook for 1 minute.
4. Move chicken and onion to the side and add egg white.  Keep stirring.
5. Add curry powders and Bon Hue seasoning.  
6. Stir well.  Add snap peas. Taste to see if more seasonings need to be added. Add the brown rice. 
7. I did not add the Braggs Liquid Aminos. I like my rice more on the dry side.  Adding liquid makes the rice fluffy, vs more fried.
8.  At the end, add the green onion.  And very little Sriracha bc it is already pretty spicy.

This should take no longer than 10 minutes to cook. But the key is adding the rice toward the end and keeping the wok on high heat. 

The ingredients in the Asian seasoning packet contains chili, paprika, ginger and onion.  I add VERY little of this.  If I did not add curry powders, I would not have added this. I wanted a strong spice/herb flavor.  

I did not add salt bc I cooked the Jasmine rice days ago and it is seasoned in chicken broth and salt already.  Also, the curry powders from Central Market has salt in it.  So salt is not necessary.

I love making dried seasonings and pastes to season my meats.  I butterflied a whole chicken and that will be going on the grill later tonight and this is the paste I made for it to marinate in.  It looks like pesto, but it is the fresh thyme  that have it the green color.  Sorry guys, I don’t measure seasonings, but I will guesstimate!

- 1 bunch thyme
- Handful of fresh peeled ginger 
- Handful of garlic 
- Grate 1 whole lemon for the skin

Put it all in a blender until it is small pieces and then add extra light virgin olive oil until it is smooth.
Then I season the paste with 1.5 tsp kosher salt,  1/2 tsp course black pepper, 1 tsp poultry seasoning, and 1/2 tsp habanero pepper (optional).
